For example, I don’t normally crave raw cookie dough, but I always seem to want some when I’m pregnant. Rather than digging into a tube of raw cookie dough, I’ve had to find other (healthier) ways to satisfy those cravings.
This Healthy Cookie Dough Bites Recipe seems to do the trick. They don’t taste exactly like raw cookie dough, but they’re close enough, and they don’t leave you with that greasy, cookie dough hangover.
Healthy Cookie Dough Bites Recipe
- 1 cup unsalted cashews
- 1/2 cup rolled oats
- 1/2 cup medjool dates*
- 2 tablespoons real maple syrup
- 1 tablespoon cashew butter
- 1/2 teaspoon vanilla extract
- Pinch of sea salt
- 2 tablespoons mini chocolate chips**
Add cashews and oats to a food processor, and pulse into a fine flour.
Add dates, and pulse to chop.
Pulse in maple syrup, cashew butter, vanilla, and salt. The mixture should be sticky and should hold together.
Stir in chocolate chips.
Scoop mixture out by the tablespoonful, and roll into a ball.
Place bites on a parchment or silicone-lined baking sheet.
Freeze for 30 minutes, or until firm.
Store, covered, in the fridge.
*Soak the dates in boiling water for 10-20 minutes. Drain.
**Use vegan chips if you'd like to keep the recipe vegan.
