Snacks should be easy!
Since they aren’t a meal, it should be easy to grab a quick snack without a lot of effort or thought. Except that it isn’t always easy.
That’s why I plan ahead when it comes to snacks. I like to have some go-tos ready so that when I get hungry and need to easy something quickly, I can grab one of those snacks.
This Nutty Granola recipe makes a great make-ahead snack or breakfast. It is full of fruit, and nuts, and oats, and it’s great sprinkled over yogurt or topped with some coconut milk. It’s also a really flexible recipe and can be tailored to whatever fruit and nuts you happen to have on hand at that time.
Nutty Granola Recipe
- 3 cups old-fashioned oats
- 1/2 cup chopped walnuts
- 1/2 cup sunflower seeds
- 1/2 cup chopped pecans
- 1 cup dried cranberries or raisins
- 2 tablespoons chia seeds
- 1/2 teaspoon ground cinnamon
- 3/4 cup pure maple syrup
Preheat oven to 300 F. Grease a large rimmed baking sheet with nonstick cooking spray.
Stir all of the ingredients except maple syrup.
Add maple syrup. Toss to coat.
Spread on baking sheet.
Bake for 30 minutes, stirring occasionally, or until golden brown.
Let cool on baking sheet.
Store, covered, in the fridge for up to 2 weeks.
