This past weekend we took our kids to pick peaches at a local farm.
My husband said that it was brilliant on the part of the farm because you had to pay to get into the festival, and then you also paid to pick the peaches. Regardless of the marketing, we had a lot of fun and came home with a flat full of yummy peaches.
Peach jam is one of my favorite things to make during peach season. This Peach Chia Seed Jam is a simple, healthy alternative to the sugar-laden jam recipes. It uses just a fraction of the sweetener that most jams usually call for, and the combination of peach skins and chia seeds help the jam to thicken up.
Peach Chia Seed Jam
- 1 pound ripe peaches pitted and sliced
- 1/4 cup pure maple syrup or to taste
- 1 tablespoon fresh lemon juice
- 1 tablespoon chia seeds
Add peaches, maple syrup, and lemon juice to a saucepan.
Bring to a boil over medium-low heat.
Continue cooking, stirring occasionally, until the peaches have given off their juices and cooked down to desired consistency.
Remove from heat, and stir in chia seeds.
Let cool to room temperature, and store, covered, in the fridge.
*Since I leave the skins on the peaches, I recommend using organic peaches for this recipe.
